From a very early age, Michel Gebel dreamt of becoming a maître d’hôtel at a prestigious address. “I discovered service when working in my mother’s small shop. In contact with clients, this activity seemed evident to me.” At the age of 20, he joined Domaine Les Crayères as dining-room attendant. His progress was remarkable: he excelled in this gastronomic restaurant to the point of becoming its Director, then spent ten years at the head of the newly opened Brasserie Le Jardin before his reappointment to the post of Director of Le Parc** in 2020, enriched by all these experiences and his perfect knowledge of the clientele. In this majestic setting, the smallest detail is vital in creating a warm, refined world. “Rigour and elegance are essential. A tie must be perfectly adjusted, shoes impeccably polished.” Beyond presentation, Michel Gebel compares his role and that of his teams to that of actors. “A smile helps you to play your part, as guests like to receive a natural warm welcome.” The dining-room ceremonial also helps to strengthen these bonds. “Guests admire precise cuts of meat, making our work more significant than just bringing meals to their table.” Though demands do not stop here. Being able to adapt is also vital: being discreet during a business lunch or interacting more with a couple if the occasion calls for it. “The dish is something exceptional and must be equalled by the ambiance at table”. Made possible by perfect harmony between kitchen, dining-room and guests, this alchemy ensures truly bespoke service.
