At the heart of quality

She keeps an eye on things, both literally and figuratively. Meet Marie-Sophie Darnois, Supervisor for Quality, Hygiene, Security, and the Environment.

Quality is an essential value that inspires us every day.” More than a conviction, it is a real imperative that guides Marie-Sophie Darnois. In the Mulcent workshop, she follows each stage very closely: from tarama production to the packaging of roe and caviar. She thus ensures that each batch leaves Les Yvelines offering irreproachable quality. “Guaranteeing food safety for our products is top priority.” Trained in the food and biology industries, she soon became familiar with challenges in the sector: hygiene standards, traceability, inspections. She likes responsibilities, without being centre stage. “It is work accomplished behind the scenes, but with a significant impact on consumers’ safety,” she points out. Three years ago, she joined Le Comptoir du Caviar, drawn by values she deeply shares: rigour and a desire to inject fresh dynamism into service. She updates procedures, clarifies tools, structures documentation. Which has produced results: 98.33% conformity in the last IFS Progress Food audit. A reward she describes as a collective victory. Because, for Marie-Sophie Darnois, “I” always disappears behind “we”. She is quite adamant: “All alone, someone in charge of quality cannot do much. Without my team, I achieve nothing”. She works hand in hand with the Production Manager, team leaders and all operators. In her opinion, they are the ones who embody the food safety culture that she defends each day. Thanks to this synergy, each tin of caviar, each pot of roe or tarama, extends the promise of flavoursome and festive enjoyment.
