A name steeped in history

On entering the restaurant, an old book draws one's gaze, lovingly displayed behind glass: the ''Viandier''.

This very first cookbook in the French language was written by Guillaume Tirel aka Taillevent (1310-1395), the cook of Charles V and Charles VI. It inspired artist Solène Eloy to create poetic decor in the Salle Lamennais whose wood panelling is adorned with delicate sketches in copper leaf gilding, representing herbs, spices, feathers from game… In niches, embossed glass bears the names of ingredients used in the Middle Ages such as "poulaille", "oïstre" or "venaison". A dialogue between the cultural legacy bequeathed by this precious cookbook and the restaurant now paying it homage.
