Inside, the dining-room is laid out around an open kitchen, presenting codes of the industrial style in a chic, cutting-edge interpretation by Pierre-Yves Rochon. Red brick walls, suspended metal lighting, bench seats and chairs in suede in shades of terra-cotta and pistachio compose a warm décor, highlighted by beautifully laid tables of light wood. To orchestrate this unique setting, Lucas Kleinclauss and his team ensure that each visit is a moment of pure enjoyment. In the kitchen, Chef Christophe Moret sets his signature to a generous, spontaneous menu, in tune with the seasons and designed to reinstate conviviality at the core of the experience with the collaboration of Chef Aurélien André and his twenty-five years of expertise. Superb proposals for sharing such as braised Ibaïama pork belly, along with inspired gourmet dishes: cappuccino of lentils from Champagne with liquorice and chicory, scallops from Normandy and a curry-flavoured cauliflower arrangement, or duck tagliata with blackberry sauce and anchovies. Desserts conjured up by Chef Rosalie Boucher prolong this moment of gourmandise in all elegance, from a must-have pink pralines “île flottante” to candied chestnuts in a play on textures, tweaked with lemon.
